Long ago I inherited a now battered and well-loved metal mold ring pan from my grandmother’s kitchen, and it is now a prized possession. No one else in the family wanted to claim it as making cheese rings and jellied salads were no longer in vogue at the time….but times have changed! You see, my grandmother ran a bed and breakfast in the 40’ies and 50’ies in Ireland, her ‘high tea-table’ as it was called, featured jellied salads with beetroot and blackcurrant, lime jelly with cream cheese, apples, celery, carrot and orange to list just a few combination memories, all made possible with that old mold ring.
In today’s world however, we now watch popular cooking shows that show us how to make meals in 30 minute, not the extravagant selections that may take days to prepare as they did in my gandmother’s time. Yet strangely, a part of us still wants to entertain with that retro glamour and bring a sense of nostalgia to our guests, don’t we?
When I first moved to the American South you can imagine how my heart leaped to see the ever famous Cheese ring with strawberry preserves reminding me of my grandmother’s era and that old mold ring that I inhereited. I love the savory cheese the sweetness of the preserves but of course had to make my own Irish twist on this much-loved Southern classic as it seems like the retro cheese ring is having a come back as the recipe is featured in November’s Southern living magazine!
To give my own Irish twist to this Southern favorite I have substituted Kerrygold Reserve cheddar cheese instead of the sharp cheddar and was able to reduce the mayo by 1/4 cup because of the creamy texture of cheese produced from natural grass-fed cows. The ring is perfect for Fall gatherings and a perfect harvest feast for the eyes and soul. I choose peach preserves but you can substitute your favorite jelly or jam and make it your own revised retro family tradition.
Here is the amended recipe:
1 cup pecans (toasted)
2 (7 oz) blocks of Kerrygold reserve cheddar (grated)
1/2 tsp tabasco sauce
1 clove garlic
1 Tbsp grated onion
1/2 cup peach preserves
(How to make it)
Line a small ring pan with clear plastic wrap. Stir all ingredients together and press in to pan. Chill for at least 2 hours before removing from mold. Fill the center of the ring with peach preserves.
Enjoy!…and try to dig out your gandmother’s old cheese ring mold, you’ll be glad you did!
